
Turkey Kale Meatballs with Herbed Cream Sauce
Ingredients
1 lb Lean ground turkey
1 ½ cups Baby kale, finley chopped
1 tbsp Low sodium Parmesan cheese
1 Egg
¼ cup Low-fat plain Greek yogurt
1 tsp Apple cider vinegar
1 tsp Garlic powder
2 tbsp Dill, chopped
2 tbsp Parsley, chopped
Directions
Preheat oven to 350F. Grease a baking sheet. Set aside.
In a large mixing bowl, combine turkey, kale, Parmesan, and egg. Form into 16 small meatballs. Place on prepared baking sheet. Transfer pan to oven and bake 25-30 minutes, until cooked through, turning halfway through.
In a small bowl, whisk to combine 1 Tbsp hot water, Greek yogurt, apple cider vinegar, garlic powder, dill, and parsley.
Serve meatballs drizzled with cream sauce.
