
Slow Cooker Pork Carnitas
Ingredients
1 ½ lbs Pork shoulder, trimmed
2 ½ cups No sugar added low sodium crushed tomatoes
2 Limes, juiced
1 tbsp Paprika
2 tbsp Garlic powder
½ tbsp Cumin
1 tsp Dried oregano
Directions
In the bowl of a slow cooker, whisk together 1/2 cup water, crushed tomatoes, lime juice, paprika, garlic powder, cumin, and dried oregano.
Pat pork loin dry and carefully add to the slow cooker. Turn to coat all sides. Cover and cook on low for 8-10 hours, until meat easily shreds.
Shred pork and serve with juices. Garnish with cilantro (optional).
