
Santa Fe Black Bean Soup with Vegetarian Sausage
Ingredients
1 Clove garlic, minced
½ cup Onion, diced
1 cup Can low-sodium black beans, rinsed and drained
½ cup No salt added crushed tomatoes
½ cup Frozen corn
½ tbsp Chili powder
½ tbsp Paprika
½ tbsp Cumin
¼ tsp Dried oregano
1 cup Low-sodium vegetable broth
7 oz Low-carb plant-based sausage, sliced into half moons
Directions
In the bowl of a slow cooker, combine 1 cup of water with all ingredients. Stir to combine.
Cover and cook on high for 4 hours.
