Teriyaki Beef Skewers

Ingredients

2 tbsp Tamari
1 tbsp Rice vinegar
1 Clove Garlic, minced
8 oz Lean grass-fed steak, cubed
½ cup Onion, large diced
½ cup Red bell pepper, large diced
6 Whole mushrooms, halved
8 Cherry tomatoes
¼ cup Pineapple chunks
½ tbsp Olive oil
4 Bamboo skewers

Directions

Soak skewers in water until ready to use.

In a large bowl, whisk tamari, rice vinegar, garlic, ginger, and cilantro.

Add steak and toss to coat. Set aside to marinate for 15 minutes.

Preheat oven to 375F.

In a large bowl, toss onion, bell pepper, mushrooms, and cherry tomatoes in olive oil to coat.

Remove steak from marinade, allowing excess to drip away.

Remove skewers from water. Thread skewers with steak, onion, bell pepper, mushroom, cherry tomatoes, and pineapple.* Place on a sheet pan and transfer to the oven. Bake 20 minutes, flipping halfway through.
