
Cranberry Chicken Salad
Ingredients
¼ cup low-fat cottage cheese
¼ tbsp low-fat Greek yogurt
1 tbsp lemon juice
2 cups boneless skinless chicken breasts, boiled, shredded, and cooled
¼ cup celery, chopped
¼ cup carrots, shredded
¼ cup fresh cranberries, chopped
2 tbsp parsley, chopped
2 tbsp dill, chopped and divided
Directions
Layout all of the ingredients from above before you get started
In a large bowl, whisk cottage cheese, greek yogurt, and lemon juice until smooth.
Add shredded chicken, celery, carrots, cranberries, parsley, & half of dill. Stir until well combined.
Serve garnished with remaining dill.
