
Classic Italian Meatloaf
Ingredients
¼ cup cup red onions, small diced
2 cloves garlic, minced
½ cup zucchini, small diced
16 oz lean ground beef
8 oz lean ground turkey
¼ cup almond flour
2 tbsp grated parmesan
1 egg
¾ cup no salt added diced tomatoes
1 tsp no salt added Italian seasoning
Directions
Gather all of the ingredients from above and set them out.
Preheat oven to 400F. Line a loaf pan with parchment paper. Set aside.
In a large skillet, heat 2 Tbsp water over medium-high heat. Add onions and cook 3-4 minutes, until translucent. Add zucchini and cook 3-4 minutes, until just tender. Add garlic and cook 30 seconds, until fragrant.
Remove and set aside to cool. Add 1 Tbsp water at a time as needed to keep pan from drying out.
In a large mixing bowl, combine the cooled vegetables, beef, turkey, almond flour, parmesan, and egg until combined.
Transfer to loaf pan.
Top with crushed tomatoes.
Transfer pan to oven and bake 30-40 minutes, until cooked through.
Cool 10 minutes then slice.
