
Spanakopita Chicken Patties
Ingredients
½ cup chickpeas, drained and rinsed
16 oz lean ground chicken
1 cup spinach, finely sliced
1 egg
2 oz reduced fat feta cheese
2 cloves garlic, minced
½ tsp dried oregano
½ tsp paprika
1 tbsp parsley, chopped
Directions
Preheat oven to 350F. Grease a baking sheet. Set aside.
Gather all of the ingredients from above and lay them out.
In a food processor, pulse chickpeas until crumbly.
In a large mixing bowl, combine chickpeas with ground chicken, spinach, egg, feta, garlic, oregano, paprika and parsley. Mix until completely combined.
Form into 8 patties, about 1/4 cup each. Place on prepared baking sheet.
Transfer to oven and bake 18-20 minutes, flipping halfway, until cooked through.
Serve warm.
