
Lemon Tahini Shrimp over Zucchini Noodles
Ingredients
1 tsp Olive oil
12 oz Shrimp, peeled and deveined
1 Lemon juiced
½ tsp Tahini
1 Clove garlic, minced
2 cups Zucchini noodles
2 tbsp Parsley, chopped
Directions
In a skillet, heat half of olive oil over medium heat.
Add shrimp and cook 2 minutes, until just pink. Remove and set aside.
In a small bowl, whisk lemon juice and tahini until combined.
In the pan used for the shrimp, heat remaining olive oil.
Add garlic and cook 30 seconds, until fragrant. Add tahini mixture and zucchini noodles. Cook 3-4 minutes, until zucchini is just tender. Add shrimp back to pan and toss to coat. Cook another 1-2 minutes, until shrimp is cooked through.
Garnish with parsley.
