
Grain Free Pasta Primavera
Ingredients
½ tbsp Olive oil
¼ cup Red onion, thinly sliced
¼ Red bell pepper, thinly sliced
1 ¼ cups Zucchini noodles
1 Lemon, juiced
16 Can low sodium cannellini beans, rinsed and drained
1 tbsp Reduced fat grated Parmesan
2 tbsp Basil, chopped
Directions
In a large skillet, heat olive oil over medium-high heat. Add onion and peppers. Saute 2-3 minutes, until just tender.
Add lemon juice, asparagus, and beans. Cook 2-3 minutes.
Add zucchini noodles. Cook 3-4 minutes, until noodles are just tender.
Remove from heat. Add Parmesan and basil. Toss to combine.
