
Creamy Tuscan Shrimp
Ingredients
1 tbsp unsalted butter
8 oz shrimp, peeled & deveined
3 cloves garlic, minced
2 cups baby arugula
¾ cup salt added diced tomatoes
3 tbsp low-fat plain Greek yogurt
1 tsp salt-free italian seasoning
2 tbsp parsley, chopped
Directions
Prepare all ingredients for cooking
In a large skillet, melt butter over medium-high heat.
Add shrimp and cook 1-2 minutes, until just pink.
Add garlic and cook another minute, until shrimp is cooked through and garlic is fragrant.
Add arugula and stir to wilt.
Add diced tomatoes, Greek yogurt, half of parsley, and Italian seasoning. Stir to combine and cook 1-2 minutes, until heated through.
Serve shrimp garnished with remaining parsley.
