
Ginger Garlic Tofu Puree
Ingredients
1 tbsp coconut aminos
1 tbsp ginger, minced
1 clove garlic, minced
16 oz firm tofu, cubed
Directions
In a skillet, coconut aminos, ginger, garlic, and 1/4 cup water over medium-high. Bring to boil.
Add tofu and cook 3-4 minutes, stirring occasionally, until warmed. Add 1 Tbsp water at a time as needed to keep the pan from drying out.
Transfer mixture to a food processor and process until smooth
Spoon a single portion into a small bowl and enjoy!
